The”Winterfat” Mix
Winterfat, or Ceratoides lanata, was chosen as the name for this variety mix of grassfed beef because on Heirloom Cattle Ranch our cattle graze on a wide variety of forage plants including native shrubs. This unique native plant was chosen for its very beautiful display of woolly seed heads that appear in the late fall and winter. Winterfat is very beautiful when the sun shines on it, because the tufts on the tips of the branches appear to glow. The name "Winterfat" came to be because grazing herds prefer this plant for winter forage.

The”Saltbush” Mix
Four Wing Salt Bush, Atriplex canescens, gets its name from the seed, which has four paperlike wings that project from the seed at right angles. "Saltbush" refers to the alkaline soil habitats in which the plant grows. Four-wing saltbush is an important plant to restore pastures made alkaline from decades of over-irrigation. It is also an important browse plant for wildlife and livestock. Like many plants that can tolerate salty soils, the four-wing saltbush has tiny bladders located on the leaf surface that store salts. Some researchers believe that the salts in the leaf's tissues act like antifreeze, enabling the plant to continue to photosynthesize longer in winter.

The”Mountain Brome” Mix
Mountain Brome, or Bromus carinatus, is a bunchgrass that thrives in arid areas at low elevations and in association with shrubs like winterfat and saltbush. It tolerates grazing and drought well and is palatable to all classes of livestock early in the grazing season. Cattle and horses relish the seedheads.

The”Corriente” Mix
This beef is a rare “heirloom beef” noted for its excellent flavor and delicate finish. The beef is from cattle that are descendants of the original Spanish cattle and are little influenced by modern breeds. The are now seen only in the remote parts of our country. The Corriente are also known as Criollo cattle. Both of these these terms, which means "common cattle" or "cattle of the country", are applied to more or less pure descendants of the Spanish cattle, which were brought to this country over 5 centuries ago.
